Vegan, gluten-free, dairy-free, sugar-free…..and packed with protein and healthy fats!
I would not call these cookies even though they sort of look like cookies… They’re more of circular shaped healthy granola bar? :)
They are super easy to make and can be eaten any time of day as a quick snack or to satisfy a sweet tooth/craving. The riper your bananas, the sweater they will taste.
INGREDIENTS
1/2 cup natural (no sugar added) peanut butter
Two mashed ripe bananas
1 1/2 cups rolled oats (quick oats work best)
1 tsp vanilla extract
Add-ons (chocolate chips, nuts, seeds)
Top with flakey salt (optional)
INSTRUCTIONS
Mash bananas, and mix with peanut butter and vanilla (I used my food processor, but you can do by hand)
Fold in oats (by hand)
Let sit in the fridge for 10 minutes to thicken
Add in extras (I used 1/4 cup mini vegan chocolate chips and 1/4 cup pumpkin seeds)
Bake at 350 degrees for 12-15 minutes.
